Ingredients
  

  • 3 cups cooked rice white or brown
  • 1 pound breakfast sausage ground (spicy or mild)
  • ½ large red bell pepper chopped (about 1 cup)
  • 1 small onion chopped (about 1 cup)
  • ¼ teaspoon cayenne pepper optional if using spicy sausage
  • 1 tablespoon garlic minced
  • 1 teaspoon paprika smoked or sweet
  • ½ teaspoon black pepper
  • 14.5 ounces canned black beans drained

Method
 

  1. Step 1: In a large heavy skillet over medium-high heat, cook the breakfast sausage until completely browned, breaking it up into small crumbles as it cooks. This should take approximately 10 minutes.
  2. Step 2: Remove all but 2 tablespoons of the rendered fat from the pan, leaving just enough to sauté the vegetables.
  3. Step 3: Add the chopped bell pepper, onion, cayenne pepper, minced garlic, paprika, and black pepper to the skillet. Stir everything together to combine.
  4. Step 4: Reduce heat to medium and cook the vegetable mixture for about 10 minutes, stirring occasionally, until the bell pepper has softened and the onions are translucent.
  5. Step 5: Add the cooked rice to the skillet and reduce heat to low. Stir thoroughly to combine the rice with the sausage and vegetable mixture, ensuring even distribution.
  6. Step 6: Continue heating for 5 minutes, stirring occasionally, until the rice is hot throughout. Serve immediately.
